White Tea

White tea gets its name from its fine, light-colored down. The leaves are not first steamed as in the production of green tea but are slowly heated and dried shortly after harvesting. So only a small percentage of fermented tea is included. The infusion, therefore, has only a light color with little tannin. It is usually mild and flowery in taste.
